Food Wednesdays

   Last week for St Patrick's day I did make a corned beef with cabbage and a few small potatoes dinner.  We enjoy reuben sandwiches so I bought all the fixins.

    Rye bread, gluten free bread for me, sauerkraut, thousand island dressing, swiss cheese, corned beef sliced thin, ghee to butter both sides, and cast iron pans

I found a jar of this artisan sauerkraut that was really delicious in my pantry-something I had bought several years ago at Aldi store-that is one store I really miss since moving to the lake.


Gluten free sandwich


 
                          I was really happy with this gluten free whole grain bread


Spread thousand island dressing on both sides of the bread, add the swiss cheese and the sauerkraut on both sides, and then add a couple layers of corned beef slices to one side and top with the other piece. I used ghee to butter both sides of the bread for grilling. Could also use butter, or I have used a spray olive oil that works well too


Grill-I cook mostly with cast iron pans-so I grabbed this one-and then set a small skillet on top to weight it down. The heat was medium  I timed it around 3 minutes, then turned it for the grill marks another 3 minutes and repeat with the other side. cut in half and serve-Yum.

  I did this gluten free sandwich after my husband's sandwich and forgot to turn the temperature down a bit on the cast iron-not burnt though

   Sorry I forgot to take a photo adding the meat slices, and also a photo of the cast iron skillet on top of the sandwich while grilling.

  2. Now that I avoid gluten, I miss sandwiches so much, but that doesn’t seem to be a problem for you! Oh yummy, your Reuben sandwiches look so good! I have all the ingredients except sauerkraut, which I am thinking would be a healthy addition to my diet now.

    1. Hi, yes sauerkraut is excellent for digestion-this about the only time I have a sandwich. I freeze the gluten free bread and toast it later with peanut butter-my year bread treat haha
      this gluten free bread was really good and the slices were small

  4. I'm usually starving when I readn your posts, but not so today. I've just never been a fan of sauerkraut, even though my grandmother did her best to get me to eat it. On the other hand, I could eat grilled cheese sandwiches any and everyday for the rest of my life.

    1. sauerkraut can be an acquired taste it goes so well in this sandwich for those of us that eat corned beef. I grew up with grilled cheese-yum.

  5. Sauerkraut on a sandwich is new to me! But, haha! We have such a pan, too. You put the kraut straight on the sandwich, no cooking?
    Ingo still teases me as as a student I "cooked" sauerkraut the way it said on the tin. Heat 5 minutes. Boy. ... warm but totally crispy! Ingo cooks it for hours. Tastes nice but all vitamins must be dead then.

    Cooking outside, we did that, too. Sweet memories (it was just way, way warmer :-)...) Hugs and to a nice day!

    1. good morning Iris-early here Sauerkraut does not need to be cooked since it is a fermented food- but it does get warmed up as it is being grilled and the cheese melts into it too.
      I think most like to warm up the sauerkraut a little bit like the can says

  8. Reubans are so good. This looks yummy. I had a Rachel a few weeks back, with turkey and coleslaw. But this looks delicious. Sandwiches for dinner are the best, aren't they? Interesting video too. I don't think I'd trust myself to pick spring wild greens and make soup. I think people who can are amazing. Thanks for sharing Kathy. hope your week is going well. hugs-Erika

    1. Good morning Erika, yes we really enjoy the reuben sandwiches. I had never heard of this till I had gotten married. and I had never had corned beef growing up something my Mom never made.
      I know many of the spring wild greens now, our friend Lilburn showed us many including the wild onion and wild garlic.
      lots of rain here this week-hopefully sunday I can get back outdoors working

  9. Hi Kathy! ☺ Joining in for the first time! I post once a week and it's usually for my art, but I always include foodie fun, hope that's okay! ☺ I'm so excited for spring and FRESH food! We've been eating from the freezer and pantry all winter and I'm craving salads. I love Reubens, they are so good, I usually add a lot of extra cheese to the sandwiches. Haven't had one in a while though! I tried to make sauerkraut once and it turned out really well, must try again! ☺

      Yes I am ready for fresh foods too. back when we were preserving just about everything we ate-we did a large crock full of sauerkraut and then I canned it up in pints-so good

  10. Every year i say i'm going to make corned beef and cabbage and i never do.. I've tried it at many restaurants and they just don't make it the way my Mother used to... so i'm going to have to make it myself.. This year i had chaos at my house so wasn't happening.. I may just have to make it other than St Pattys Day.. MMMMmmm your Rueben's look GOOD!! I used to get them at Schlosky's but they stopped making them during the pandemic and haven't added them back to the menu... Happy Food Wednesday !! Hugs! deb

    1. I agree never had a corned beef dinner we liked in the restaurants either. Reubens are Larry's favorite sandwich, so I make a corned beef probably two times a year so he can have Reubens haha

  12. Your grilled sandwich looks delicious - gosh, I'm getting hungry just looking at it. As a complete bread lover (I'm German after all) I think it must be hard to not be able to have gluten, and I'm glad that you found a gluten free whole grain bread that you like.

    1. Thank you this is really a delicious sandwich. I never ate allot of bread as it always made me ill-years later about 25 years ago I figured out the gluten issue. there are some really good gf breads out there I gave up trying to bake my own as they never turned out good-a disappointment since I used to bake all our breads.

  14. I like both kinds of corned beef: the kosher-deli kind and the St.Patrick's day kind. They are spiced differently. Either one could be the ingredient for the original Reuben sandwich: there are many claims about who invented it! I admire your grill marks!
