Food Wednesdays

 Welcome Everyone To Food Wednesdays.

This week since Spring is finally approaching and fresh fish will be more available I went over to James Townsend and Son (17th and 18th century cooking) to see what tutorials he had on fish.

  I found a French 1650 recipe that he shared, and looks like the whole fish will be very moist and tasty with this method


I found this St Patrick's Day dish which would taste good with the fish

  2. Interesting to see how they cooked like back then. And the fish pie looks really yummy, I´d take white fish, though.
    Hmm and the second! That I really want to try. We have that side by side, kale and potatoes, how boring ;-)

    1. Yes any whole fish would be good I think prepared this way. I never would have thought to combine mashed potatoes with kale sounded delicious

  4. I think I'll pass on the fish recipe but we do love Colcannon - not so much with kale(something I still can't get past being cattle fodder!) but with sprouts or cabbage - delicious and healthy - I have made it with broccoli but wasn't keen on the texture! Hugs, Chrisx

    1. My husband won't eat kale and now it has too much vit K in it for one of his heart medications, so I don't buy it anymore. it does have a rough texture to it. I think I would like this with cabbage better-thanks

    1. If you are not familiar with James Townsend and son he has years of these food videos-some are series. Lots of knowledge and recipes there. I would love his kitchen-he just starts a fire right on one of the counter tops. he has made tutorials on homemade outdoor earthen ovens too

  6. Oh man... you just reminded me St Patty's day is tomorrow... I was sooo gonna make corned beef and cabbage this year... but i feel too crappy to do it... Oh well guess i can make it any time not just St Patty's Day..I don't cook much fish at home... some tilapia baked in the oven once in awhile.. I love how you find such interesting things to share!   7. I have never been into Irish foods. My Nan and Mom use to cook some up and hmmm just not my thing. I am intrigued with the fish pastry though. Have a great day.

  8. This is the first time that I watched Townsend. I like the set-up, it really meets this theme. The fish looks delicious and the mashed potatoes and kale as well.
