Brrrr Feels Like Winter Here

   From lovely spring like temperatures, we are now in a very cold weather snap. Low 20's at night with winds during the day.  Perfect for baking though

   I decided to bake up a quick bread using a banana and a can of organic squash puree  It turned out delicious-I used coconut sugar, gluten free flour blend and added small dark chocolate chips. Very moist and not real sweet. A note when baking gluten free goods like this-to really know it is baked done use an instant read thermometer and test in the middle-205-210 degrees F to know it is baked.  In the past I had tossed out so many baked items not knowing this. This one took an extra 15 minutes. 


  I am kinda thinking of making us tamales from scratch for Thanksgiving, and serving a little bit of the smoked turkey on the side, along with my own cranberry dish 

    I had forgotten to pick up a Butterball breast to serve as the main meat and forgot to. Smoked meat is very rich-goes well with crackers and cheese or small rye breads.  I did buy us each a large potato to serve-a treat for us-so now not sure what I will prepare for the two of us on Thanksgiving day. It will be different for sure this year-smiles

  1. The quick bread looks moist and comforting. Great with a pot of freshly brewed tea! We had a few really cold days last week, suddenly the temperature turned up and it almost feels like early spring...should be back to winter temperature in a couple of days though. Have a great day, Kathy!

    1. thank you It is nice when the weather just warms up for us-we have been spoiled most of this month but warm down to the 20's is an adjustment for sure smiles

We willl have Daughter and family over for Thanksgiving... eldest Grandlittle coming over to 'help' me bake and cook the day before...lol We'll see how that goes and how long i can keep her interested... Thanks so much for the temps for Gluten free stuff... A digital thermometer is on my Christmas list... Can you recommend one ? Do you use digital? I'd like to use it mostly for baking and candy making... I signed up to make cookies for the Soldiers up on base that do not get to go home for the Holidays AND cookies for the Veterans Dinner for Christmas too... AND cookies for us as well... I'll be a baking fool....lol Wanna come over?? ! lol We'd have fun. :) Its been beautiful weather here... cold/cool as soon as the sun goes down but sunny and warm during the day.... my kind of weather...   6. Your banana bread looks so temptingly delicious - perfect for a chilly day. I have no doubt you and Larry will have another fantastic Thanksgiving meal.     1. thanks I usually make tamales around Christmas time-I have decided on homemade Belgium waffles with the smoked turkey, my cranberry sauce, and today I made from scratch sweet potato pie sounds good for the two of us

  8. We had icing this morning with the rain. We are in for a big storm on Thursday 5 to 9 inches for our first snow of the season. My daughter is hosting quite a group we will stay home. To many is to many for us and we have begun to enjoy our thansgivings.
    I have a butterball turkey breast to bake with all the fixings
