Rain's Art and Dinner Date & Also linking up with Art Journal Journey

 We have endured a very very cold week so far, down in the low teens most nights, today first time in awhile we made it to the low 30's F during the day. A little warm up coming our way for a couple days-with sunshine I am hoping.

  I thought I would link up with Rain's Art and Dinner Date this week-find link in my side column to participate.

  Today I decided to make a gluten free pineapple upside down cake in my Grandma's 10 inch cast iron pan.  Have not made one in quite awhile-turned out really delicious. When I flipped this cake over on to a handmade pottery large plate-it came right out of the pan perfectly.




This was so moist and delicious. For gluten free cakes I use a quality gluten free cake mix-makes it less stressful for me that it will bake up right. This one was a Bob's Red Mill Gluten Free Yellow cake mix. Instead of the water I used the pineapple juice, and I also added a teaspoon of pineapple extract to the batter, and used olive oil instead of butter.   For the bottom I used melted butter and a blend of brown sugar and coconut sugar. Then I added a can of drained crushed pineapple. I prefer this pineapple over the large rings-nicer to cut the slices this way, and we do not like those red cherries. smiles

For my art

  I have been working with my own botanical inks and watercolor inks and paints a few days a week-to get more art practice in.

  This painting, I used the red ink for the roof and flag thinking I would also link up with AJJ for the theme red-but I am not sure if this qualifies as a journal page or not? Update: Erika says I can link up my page so will do that-thank you. Find link in my side bar for Art Journal Journey

 The page on top is from a magazine and used for inspiration. I had a line out of place on the log house so turned it into a flag. The red is one of the Winsor Newton watercolor inks. I was trying to write KC Chiefs but I had a hard time writing over the ink for some reason-I did manage to get just KC on the flag.


The log cabin is all done in different inks-iron gall, black walnut, and Winsor Newton inks

The background is all watercolor paints except for the bush-tree branches are black walnut ink


Sorry as I was taking these photos I was losing day light the colors are a bit muted. Another fun little painting for me to practice  and learn using the inks and paints

  1. The cake looks perfect! Thanks for the tip on the mix. It is the kind of cake that's cheery for winter, like a pudding cake.
    Lovely drawing. The two not mixing is probably chemical issue, one more permanent than the other is my guess.

    1. Thank you I agree, this cake was delicious. thanks for the tip-there did seem to be a barrier with the red ink as I didn't like me writing on top of it-I did get the black walnut to write KC

  2. Anything pineapple is Dan's favorite. Your gf version turned out perfect. Yummy! You are getting wonderful colors from your inks...even Kansas City red! We are so looking forward to some warmer weather and seeing the last of the ice that's covering everything.

    1. Hi Mary this cake turned so good I think the olive oil in the cake kept it more moist too. I am so looking forward to warmer weather too and no ice-our ice finally left this afternoon.

  3. Your pineapple upside down cake looks yummy. I haven't made one for a long time either, so thank you for that idea. And your cabin page came out great. With that red roof you could link up to AJJ's new challenge, if you want to that is. I hope your warm weather lasts.     1. Oh thank you, I wasn't sure if this was the right journal page for AJJ-but I have made this spiral into watercolor and ink art practices.
      The cake tasted so good, am glad I made it--this has been a very very cold several days with ice every where too-stay safe

  6. We love upside down cakes. Yours did come out really moist and beautiful thanks to that vintage cast iron pan! Stay warm, Kathy, and hopefully have some sunshine soon.

    1. I have not made an upside down cake for some time now-I think the cast iron was a good choice too. I usually bake them in glass but I liked this better. i think we will have sunshine today-finally hugs

  16. Very cute little log cabin, Kathy. It has a bit of a folk art feel for me! We have a small summer community on a lake here, all log cabins. This would fit right in!

  21. Hi, Kathy! Your pineapple upside-down cake looks scrumptious. It's my favorite cake. Do you have to adjust the temperature if you use an iron skillet? Your drawings of the cabin are fun. I'm cheering for the Chiefs in the Super Bowl. Have a great week!

    1. This cake turned out so delicious-no same temperature for cast iron pans which I think helped the cake to stay moist longer. I always time it for less than what the recipe says and then add a little more time as needed.

  23. I like the idea of crushed pineapple and making it in a cast iron pan sound so much better than messing with cake pans. Anyway, one can't argue with success and your cake is certainly a success. As for your art, practice makes perfect and you're certainly headed in that direction. Your ink selection is interesting and I assume you make them yourself ... brave soul that you are. Lovely post, Kathy ...

  24. That's a lovely painting Kathy! I have not attempted a log cabin, but now I feel like painting one! Your cake looks delicious! I have some Bob's stuff here too, I love those products but I find them a bit expensive. We don't like those red cherries either, I usually put them on for the look and we pick them off lol...

    1. Thank you Rain, this is my best log cabin so far. Hope you paint one too. Bob's has really good gluten free products I buy online where it is less money and usually free shipping too. funny about the cherries-they do look pretty I just won't eat those hugs
