I need Menu Suggestions-Please & Smiling

   Good morning,  A very very hot and humid day today.  Decided a good day to defrost the chest freezer-which is quite the job. This freezer frosts up fast these days-quite old now as we bought new when we first retired and moved to Missouri. Actually all the appliances in this lake home need to be replaced in the lake house as they are old too. I sure wish I had a bigger kitchen here at the lake so I could have brought my commercial wolf 10 burner stove with the two ovens-I soooo miss not having that.

  Larry is quite ill-I would say terminal now. His heart doctor 5 years ago told him he had around 5 years but then a couple years ago he put him on a new medicine for his heart that is giving him more time-sadly that fall over the stone wall a year and half ago changed his life sadly  Sorry I didn't intend to write all that.

  Larry is now informing me, he no longer wants to eat pork products. I have been alternating with mostly chicken breasts and different pork cuts, with a hamburger meal thrown in. He asked for beef a few weeks ago, so I bought a box of USA ranchers lean beef cuts. I would make a hearty soup but it is so hot and humid here still-not good weather for soups.  Perhaps more egg dishes?  

  So my question is I need meal ideas if you have any suggestions-I welcome them

    I am a farm girl cook and baker so I have always made everything from scratch. well with the exception of gluten free box mixes for cakes and brownies once in awhile as it was easier. I am getting away from all that now too, and when I bake for me back to from scratch-which is better anyways.

    Do any of you have a quiche recipe that does not have cheese in it? He has been asking for that, something I used to make but I think it has a lot of cheese which neither of us can eat anymore.

 Once I get the freezer defrosted and put back together, I may just do the same with the refrigerator-that really needs it too. 

   They are saying a little cooler tomorrow so that sounds like a good fresh food shopping day.  In the summer months Fridays and weekends are not good for food shopping as I don't like crowds.

  1. I am sorry to hear this, Kathy! I can give suggestions but I am not sure they would work for Larry, but hey, I will try just the same. Salads, fish (salmon), salmon sandwich, filet of salmon, cheese omelet, omelet with mushrooms and onions, green peppers. Corned beef and cucumber sandwich (the canned corned beef). I find corned beef and cucumber sandwiches refreshing...even a cucumber sandwich! The sandwiches could be for lunch, the omelet, filet of fish and salad could be for supper...the omelet would be a great breakfast, too.
    Chicken, a little beef, lamb!

Good morning thank you for your ideas-hugs Larry loves to go fishing-why we bought a lake home, but does not like to eat fish-haha I have been thinking about some creative salads with a little chicken in it. he asked for a omelet last week-so I am going to get creative with that too. we eat a main meal at 2 pm and for breakfast I usually make myself oatmeal, and Larry likes Greek yogurt with a little fresh fruit in it. we don't eat an evening meal any more-usually just a little fresh fruit.
      I will ask him about lamb as I need another protein to throw in. we love corn beef sandwiches but since they are high in salt I don't them a lot-but thanks I think I will see if the stores still have corn beef. he loves those

    2. As far as salads go, avocado is fantastic in a salad with cucumber, Romaine lettuce, tomatoes and onions!

    3. sounds dellicious I have not been able to find nice avocados this summer I think fall and winter they are better

  2. You can definitely make a quiche without cheese! Eggs, milk (or plant milk), seasonings. Vegetables of your choice. Nutritional yeast if you want it to have a cheesy taste.

  3. An easy meal I do in the crock pot is put beef in. Cook and shred then add bbq sauce for beef bbq sandwiches.Or make an au jus gravy with the shredded beef and make hot roast beef sandwiches. Janice

    1. Yum thanks Janice I have not made something like that in several years now. I would shred it and add in diced pepporccini peppers (wrong spelling)

  4. So sorry to read about Larry. That must be tough for you to write. And when I make quiche, the cheese always go on at the end, so could you just make quiche without adding the cheese. Have you tried the veggie cheese they use vegan cooking? It's actually quite good now, so you could try that too. hugs-Erika

    1. thank you Erika, I have see the veggie cheese but haven't tried it lately. I am going to search for quiche recipes online thinking in the past I used a lot of cheese inside during the baking. thanks for the tips.
      yes it just all came out while writing this post-was good for me to acknowlege what is happening though in writing

    1. Good evening we do eat a lot beans, great idea with stuffed peppers-haven't made those in awhile-thanks Larry doesn't do well with rice any more been using sweet potatoes more thank you

  7. Kathy. Thank you for sharing about your husband-I'm so sorry. I have many bean recipes on my blog including eggplant chili and other main entrees. Let me know if you would like me to round up bean recipes for you. Also, I make a very easy gazpacho soup in this hot weather. Does he like potato salad, macaroni salad, tuna salad, egg salad? Pasta with meatballs? Sweet potato chili?

Good morning thank you-I will search out your recipes thank you-I think I just drew a blank lately on what to cook I am gluten free, his system does not tolerate rice, I am also going through acid reflux since January so no spices and other foods for me-it was getting to be too much and drew a blank this week when he says no more pork products thanks again your sweet potato chili sounds good too

  8. I don't know how i missed this post Kathy.... I'm so sorry about Larry... I can only imagine how you must be feeling.. even knowing he was on a timeline with his heart.. I wish i had some recipes for you... We don't eat much beef.. if we do its out having a steak at a restaurant.. We eat alot of chicken and ground turkey.. I bake chicken in the oven put a baked potatoe with it and a veggie.. a salad... I use ground turkey in place of all hamburger.. haven't bought hamburger in years.. I have a good chili recipe using ground turkey... OH! and a recipe for Porcupines! Like you i have a lot of soups in my repertoire.. lol too too HOT for now.. I make a mean spaghetti sauce but i start out with Prego Italian Sausage sauce... and add ground turkey.. mushrooms and zucchini..
    My heart is with you Kathy... Anytime you want to talk please do....
    Now your art... those are fantastic... That heron is great! We had them at the lake in AR... Whenever we saw one alone ... well that was George and two together... that was George and Gracie... lol We are not near the lake here so miss seeing them.. Hugs! deb
