I haven't made a lemon meringue pie in quite awhile, although it is one of our favorites.
I make it from scratch from a very old Farm Journal Cookbook that I have had for over 50 years at least.
Just came out of the oven. Sometimes I get the meringue allot higher but this still looks nice. Larry will love it

ReplyDeletetotally agree-calories-I only make this one a couple times a year now-perhaps just once year. and this one needs sugar the keto sweeteners really do not work in this

I very rarely bake with sugar any more since my husband has diabiteas I like spelnda, and I also use swerve keto sweetner, and I use a bit of coconut sugar that is less than brown sugar. but for a real lemon meringue pie that will be a treat and delicious I bake this one up with sugar

I had a friend that i worked with years ago... that made the most delicious 'looking' pies.. meringue sky high every time.. beautifully browned.. Just spectacular.. My husband would work on her computer.. she'd give him a pie... company party.. she'd bring pies.... problem was they were all tasteless... and no one had the heart to tell her... she was so proud of them and it gave her such joy to make them and give them.. IF you and hubby haven't eaten it already i'd love to see a slice of it with the lemon yellow. :) I bet it beautiful.. Happy Friday!! Hugs! deb
ReplyDeleteah sweet story. The filling did not set up as firm as it should have-which was a surprise for me, but still tasted really good. fresh eggs are the best for a pie like this where you would get a more beautiful color, then store bought. the pie was still good just didn't turn out perfect
DeleteMy grandma made them from scratch too, and I have her recipe. Perhaps it came from that book. Yours looks so good. I can still taste my grandma's pies in my memory.
