T Stands for Tuesday

   Hi Friends, and welcome to my T Stands for Tuesday post, where we share a drink related photo with our hostess Bleubeard and Elizabeth, you are most welcome to join us.

  Not much happening this past week. We've had up and down weather-one day up to 80 degrees f  and then back down to low 60's f the next. T storms over the weekend with cooler temps.

  I created a few journal pages for Art Journal Journey with the Spring theme, got back to some reading and this new week I am hoping to make the drapes to be hung in front of a clothes closet in our bedroom. A new rod is in place now, so I need to get to that.

  Over the weekend,  I made chocolate dipped half-dried apricots (these are so good soft and not dried hard) and a few dried strawberries-soooo good, keto coconut macaroons-very delicious with no sugar, and I baked up a pan of lasagna since we enjoyed it so much a couple weeks ago.


I haven't baked coconut macaroons in years and had a taste for them. I looked for a recipe with no sugar and was very happy with these.
     I will share the recipe on Food Wednesdays.


  We enjoyed a few warm days sitting out on the deck-That was really nice. We enjoy the birds and there were a few fishing boats on the lake too as there was a fishing tournament going on. I have been so cold this winter, that it felt good to sit outdoors in the sunshine.

  I know many of you are opposed to water bottles-but I grabbed the last one to enjoy outdoors. If we have workers helping us in the summer time I buy a case for them-easier-and then I recycle

     


With the weather changes I have gotten a sore throat, and aching body-ugh  So I have been drinking some healing teas.  When I need to buy gluten free foods online at Vitacost-I now check out their teas-they have a very large selection. I was really pleased with the tea on the left-no tags on the tea bags, and they were enclosed in this resealable bag-love that and the tea was delicious, pretty box too.



We are still enjoying pretty sunrises each morning-I just noticed that the sun is now coming up in a different spot-when did that happen? haha A gradual change that I just now noticed.

  3. I like dried apricots but have never had them with chocolate. The macaroons look tasty. I keep that throat coat tea around. It helps :) Happy T Day

  5. I just read the comment you left above to Norma2. Count me in. I will bring ALL the condiments. You can't mess up olives, pickles, and dips. You probably wouldn't want me cooking, anyway (grin).

    Your chocolate covered apricots sound wonderful. I haven't had a macaroon in years because I found I was allergic to coconut. I can have the milk, but not the meat part. So glad you will be sharing your recipe on Wednesday, though.

    Last Sunday Scott and I ate outside on my front porch. It was warmer out there than it was in my house. I know the sun must have felt warm to you on the lake.

    That tea sounds lovely, but I have to have my caffeine in order to survive. Thanks for sharing your lake time tea, your food, and your photos of the lake with us for T this week, dear Kathy.

  6. When we had little kids around, they loved to make chocolate dipped apricots or (in season) fresh strawberries. The chocolate didn’t have to be dangerously hot. And somehow there were always drips that had to be cleaned up by eating them. Yours is a Great idea!

  7. Chocolate dipped apricots are a favorite of mine! We used to get them when visiting the chocolate shop in Williamsburg, VA and they were easily 2 inches wide.
    Throat Coat is one of our favorite teas when sick. Hope that they are helping and you feel better.

  8. Lovely sunrises - and next week it will rise in a different place again after the change to Daylight Saving Time this weekend. Can you believe it's already that time again? I was just enjoying the lighter morning hours, but starting Sunday it will be dark again when we get up. I like your mug!

    1. thank you, this is a really big and heavy mug too-so I don't use it often. It doesn't seem like it is time to change the clocks again, especially since winter has returned this month.

  9. Sorry to hear you've caught something Kathy. Maybe a few coconut macaroons would help. They look delicious. I haven't had them for years. And your tea must taste great in that fun mug. Hopefully the echinacea will help. Have a wonderful T day and Tuesday. Hugs-Erika

    1. thanks so much, I had to stop taking the allergy pills for awhile as they were dehydrating me too much, and with the extremes in weather I knew it would get be especially with spring coming. the echinacea tea has been helpful

  10. Love your mug that goes perfectly with your photos overlooking the lake. Coconut macaroons- yum!!! now that is one of the few sweets I love but haven't made in a long time...
    I'll be curious to see how upcoming humidity will affect my body. Must keep the echinacea tea in mind;) Happy T day!

  12. First up: Love that pic from your FB-friend. The sunflowers look kinda... as if they call for help and I hope the world helps so much so that that little nasty man in Russia HAS to see it, HAS to give up and let the Ukraine be FREE.

  13. Coconut macaroons! Now I haven't made those in a long while. I wouldn't know where my recipe is either.
    And those choc dipped apricots sound divine. I have never made those.

    1. I know I can't believe I did that with my email address-I had to write out my address a couple times today and I guess I just did it automatic-couldn't see anyway for me to delete it
      I was really happy with these macaroons they came out really good and easy and quick to make. I have a little mini plug in crock pot I guess I would call it-got it free when I bought a large crock pot-and really easy to melt chocolate in that and just dip in the fruits.
