Food Wednesdays

 Welcome to our Food Wednesdays.

     I set up this link up so we could share food posts with each other

   I want this event to be all about the food so no rules except to be sharing posts about Food. Anything you would like to share with us-recipes, restaurants, cookbooks and more for us all to enjoy and learn new things.


      This past week I didn't do much cooking or any baking. It was cold and dreary (when I usually like to bake) but we both were not feeling well.

    I did make a really nice homemade chicken soup one day that I really loved-when I make my pots of soup I don't have a recipe-I just start throwing in hand fulls of dried veggies and lots of herbs and not salt spices.  My husband was having stomach issues too from eating too much cheese and I had made hamburgers last week for a treat for us,  so we ate bread  I looked up foods that were not constipating when I put this soup together. I made this different than I usually do.

Sweet potatoes and darker beans were  mentioned. Never thought of adding sweet potatoes to a soup. I peeled then cubed it and added in the last hour of cooking-really delicious I will do that again. For the beans Wal mart stores have a good organic no salt line now of canned beans. One I like for many dishes is their 3 bean-all dark beans. I added in zucchini cubed, and in this photo is floating the dried soup veggies I get at the Amish store. I also added in a pint of my home canned tomatoes-which I will need to can up again this summer as I just have about 6 jars left. I usually can enough for two years-something my farm girl Grandma taught me to do.

   




This is my go to canned chicken now-it does have salt added but I just rinse it with cold water


I started making Larry an omelet a couple times a week now for breakfast. Something different than yogurt and raw granola

I love these little cast iron skillets-perfect for eggs.  I saute veggies, add in a little meat left overs when cooked through,  I put a lid on and start the eggs in another little cast iron skillet.


My Mom always would lift the egg around the edges of skillet to bring down the raw egg for cooking. Makes the omelet a bit more fluffy too. When almost all the egg is cooked underneath, I then flip it over to finish cooking the egg-and then add the veggies and fold over. I will take the skillet off the heat and put a lid on for a few minutes to insure the eggs are cooked through. Larry then adds hot sauce or salsa to his omelet




   I was adding cheese to his omelets so I left that out this morning.

  1. Cheese is full of saturated fats unless maybe you use a special cheese for Larry.. We love cheese but do our best to stay away from it and when we do we use lowfat cheese.. We have omlets several times a week too.. We use eggwhites.. I still have to get my food post ready! AAAaackkk! :) Hugs! deb

    1. We love real cheeses, but we don't eat them very often. Larry's diet is so restrictive adding to watch vit k now-which is the healthy veggies. we just went off diet last week a little bread, some cheese- Larry has no problems at all with cholesterol numbers so whole eggs are a healthy food for him.
      how is your weather? we got into the 20's last night rain back tonight

    2. Cross your fingers , toes, and eyeball.. rain predicted Saturday night,Sunday AND Monday....!!!! Lets hope at least one day gives us rain!

    3. Good news Deb, I sure hope you get the rain your area needs it so bad. If I could send you some of ours here i Missouri I would-rain every day or night here for at least a week now

    1. Thank you Angie, I really loved how this soup came out. These are one of my favorite soup bowls. These are handmade pottery from a friend we knew back in the '80s I hadn't thought about them being vintage-but they are now-like us haha

  5. Sorry you were not feeling well. The soup looks like it makes all better!
    WalMart left here ages ago, sadly.
    I cannot flip eggs. It looks super-yummy! And hmmm. Cheese!

    1. I prefer not to buy much at Wal Mart, but they are usually the least expensive choice in rural areas. However we have a local grocery store near us and they have a butcher in the store too-just got sold to new owners so I will be shopping more there-rather support a small business instead.
      Once the bottom of the omelet is pretty much cooked-you can carefully flip this so it won't break. we love cheese in omelets yum

  6. I love soup and have lots of different recipes I use but more often than not, just throw ingredients together and am never accurate with anything. It's so easy to come up with a great tasting soup if you know what you like. :)

  7. Hi Kathy. Your soup looks delicious. It went from warm to cooler here also and soup sounds really delicious right now. Last week I did a bunch of cooking to feed my MIL, so now I am on a cooking break-smile, not really but we've been having easy meals the last couple of nights. Pancakes and hamburgers. But maybe I will make some soup today. It's a really good idea and I love adding all kinds of things to it. I've never added sweet potatoes either and I have a couple so I might give it a try.   10. All of the food looks great but that soup just makes my mouth water. I love a good bowl of homemade soup. A few years ago I started canning my own chicken. I can't tell you how good it is. Have a great day today.

    1. thank you I love a good homemade soup too-actually I haven't bought soup in can since college days haha
      I miss not having my gas stove for pressure cooker canning. we are hoping to get this electric stove changed over to gas once we sell the rest of our woods property. I miss canning for sure. I can do a little water bath canning on this stove but that's it for now.

  12. I am sorry to hear that you have not been feeling well, I hope it will be better now or at least very soon. Your soup looks delicious and also so pretty in those bowls. I would probably pass the sweet potatoes though, I have never really developed a taste for them. The omelette looks delicious as well, it's a great way to use up your veggies. I love cheese, too, unfortunately.
    It seems that the weather is cool or cold everywhere in the States right now, even here it's quite chilly. But we got some much needed rain, which is wonderful - I take every drop I can get. While it doesn't put a significant dent into our drought, it might postpone wildfire season a bit.

  14. both the soup and omelet sound so good! I'd skip the chicken in the soup though. I never tried making an omelet in a cast iron pan,hmmm. Although we are going more plant based we do still enjoy eggs, cheese and chicken from time to time:)

    1. cast iron is perfect for making an omelet these small skillets are just the right size too. I just put a tiny bit of oil in the pan and heat the cast iron first before adding in the eggs never sticks that way

    2. we eat very little red meat any more maybe once every couple of months. Pork is a white meat and like poultry too and fish

  15. Kathy your chicken soup looks fabulous. I have never put cubed sweet potatoes in soup before...will give it a try. Hope you and hubby are feeling much better. I made a flour less chocolate oatmeal cookie for a snack at our church on Sunday. It has peanut butter which seems to hold the cookie dough in place. I am sure putting the oats in in makes it a healthy breakfast snack. :)!! Well thank you for sharing your soup and delicious looking omelet. Have a great rest of the week. Hugs!

  17. For a second time, I left you a long message and learned it didn't take because of my profile. I'll be brief. I never buy canned beans, but soak and make my own. Your sweet pot. soup looks great. I would eat that any day. No matter how hard I try and how slow I cook my omelet, it always turns out to look like scrambled eggs when I try to flip it. You did great.

    One reason I am visiting is because you commented and I quote: "have you made any videos on how to craft with the decorator napkins? I was looking around online-some of them are really gorgeous and use vintage flowers etc. what kind of glue or how do you attach these to a page-thanks."
