It has been an extremely cold winter so far. We did get down to minus 2 F Monday but a very slow warm up beginning now. Today we have sunshine which is always a good thing.
Part of Lake in the Ozarks did begin freezing but not by us thank goodness. If we would get frozen in that can cause a lot of damage to docks and boats here. That did happen when we first moved here to the lake. With the days warming up to above freezing in the coming days-I think we will miss that ice for now on the lake in my area.
I was thinking about this very frigid winter here, and we have not had our garbage picked up in three weeks now-do to our iced gravel and steep hill on our road-so I have been careful not to fill it up with cardboard boxes etc-just food garbage.
I do need to go food shopping again soon for fresh items which may happen this Saturday or next week for sure. I do not want to deal with any driving on ice. My younger days driving in blizzards and ice is over since retirement-I can tell you stories about some of those trips-haha. I was a phone operator with Bell and AT&T when operators used to be important and needed. When I was first hired I was assigned to a cord board office-that was wild and am glad I got to experience that.
I have been Baking cookies this week.
I baked up wheat chocolate chip cookies for Larry yesterday-froze most of those. The day before I made a batch of gluten free molasses cookies. These were a childhood favorite of mine. They are a soft molasses cookie not a crunchy one. When my Mom made them they were quite large. Since I changed the flour to gluten free, used butter and coconut oil instead of shortening (ugh when I left home I never used that again) and I used half Splenda and organic sugar for the white sugar. My cookies were delicious but baked up very small. I also mixed in fresh grated ginger.
Today I am baking up a gluten free batch of chocolate chip cookies for me. I added about a half of a cup of chopped hazelnuts that I found in the freezer (I had found those at the Aldi store before moving here) I also used a dark chocolate sugar free organic chip.
I roll the dough into balls first
Then I flatten them (to the right) and bake (to the left) I will freeze a lot of them-just so I don't eat many-smiles When you don't eat much sweets then they become addictive when you have them around again. At least that is what happens to me
I was disappointed with the Notre Dame Game loss but through their season they had only lost one game and then this one. I think some of the players were playing ill as well. During the season I thought they played a lot better than many of the NFL teams
I began slow stitching on my second bag this week. I really like the lay out on this bag too, I changed it a bit from the last photo.
How are you all handling our arctic winter? Please stay safe and warm. This is the year we really needed a working woodstove-those are soooo much warmer.
Stay warm and safe
Kathy, it's cold in Nashua, NH, as well, single digits overnight and tens during the daytime at least for this week. The nashua River has iced over in spots but is not frozen solid and there are no docks or boats on it. Hope that you will get a garbage pickup soon. Staying indoors and baking cookies is a very comforting and delicious way to spend cold weather days.
ReplyDeleteI think baking is perfect for cold weather too. We have seen a lot of geese here today-perhaps the sunshine and a bit warmer has gotten them out and about.
DeleteStay warm hugs
A wood stove is much warmer but very dry even with a pan of water on the top and a lot of work. We have one.
ReplyDeleteWe have been so cold minus 12 this morning our lakes are frozen solid but this area they pull all the boats and the docks.
You are baking up a storm! we are still working on Christmas cookies here.
cathy
I always kept kettles of water on top of the woodstoves to help with the dryness I had several cast iron pieces for that purpose.
DeleteI gave away most all of the christmas cookies that I had baked-and I only made gluten free gingerbread cookies-my favorite-so I wouldn't have much around. I made one batch of sugar cut out and gingerbread cookies for Larry
Your statement about going gaga over sweets when you don't indulge often holds true for me too.
ReplyDeletehugs I froze all of mine except for 6 cookies-already ate 5 of them haha glad the rest of them are in the freezer
DeleteYummy bakiing! It is warming up a bit tomorrow, out of the deepest freeze.
ReplyDeleteWarming up here as well-a little bit more each day for a bit-thank goodness. and my husband spotted two large patches of ice on the lake out our windows-so the above freezing temps will help melt that away hopefully
DeleteBaking is a wonderful way to warm up the house on these cold days. So far, hanging in there but I'm avoiding leaving the house till things warm up a bit. At least on the days the sun is out it may still be just as cold but a lot cheerier!
ReplyDeleteI agree sunshine on a very cold day makes things much better
DeleteHugs
Ohio State is our rival here in Michigan and we did not want them to win...but they did. We are having a heat wave of 18 here this morning now. Thank goodness the temps are rising again. The ice is back in the river which is shutting down the ferries again. One only going during the daytime now. I do like seeing the Winter ducks now though. No eagle sighting yet. Cookies sound yummy and looked good. Janice
ReplyDeleteI was sure hoping Notre Dame would win, but I read later many of the players were ill with the flu they had only lost one game all season so they can still be proud
DeleteIce on water ways is not a good thing Many of the coves here on the lake that have shallow water compared to the main lake will be ice I am sure. I love watching the ducks and geese here. I have not seen our eagle pair for awhile either-they will be nesting soon too. have a good rest of your week hugs
We thankfully have a mild winter. Yours sounds dangerous!
ReplyDeleteI hate driving on icy roads and parking is a horror.
The garbage truck comes every two weeks here - plastic, paper, glass and bio goes into extra containers.
You sure did a baking galore! Ingo made rice pudding (too sweet for me).
And footy... Late at night here, so I pass, sadly!
I´m wishing you warmer temps and glad your lake didn´t freeze! To an early Spring, hugs!
This has been a rough winter for sure but we had no winter for the last 2 years so we were do. I am not used to not having a woodstove-to help keep us really warm-this house is really cold this winter-can not afford the high gas bill so thermostat is set at 72 F this house is very cold at that temperature. I will still have a too high gas bill even at this low temperature.
Deletewe are to warm up a bit in the coming days-hoping so
I am ready for an early spring too
Dear Kathy, first of all, thank you so much for your card. Yes, it only arrived now. But that's not a bad thing, because I was so happy about it. It's wonderful to have mail in the mailbox... now... in the age of PCs and cell phones. Thank you for doing it - I have to do the same:-)) for you... yes. So nice.
ReplyDeleteWe put the Christmas tree away in the living room last week, but the stars will still shine in the living room and in front of the house until Candlemas on February 2nd. (The Christmas tree is traditionally decorated on December 24th and will stay there until over the New Year.)
Your cookies look great. I love baking too. My last ones were pistachio cookies.
I love your beautiful bags and especially your wonderful hand quilting. And I hope you enjoy sewing.
We have 42 Fahrenheit and a bit of sun, if it gets any warmer I'll have to think about Easter, but it could get cold again in February. Heating with wood stoves is something nice, I remember it from my childhood or from holiday homes.
Best wishes to you both, get through the cold season well.
A hug for you from Viola
p.s. I look forward to seeing your bag.
Dear Kathy, the bag, yes, absolutely fantastic. It will probably fail because of the postage... I think the postage has become very expensive. That should be checked. I would also like to send you something nice.
ReplyDeleteHugs
Your cookies look good.
ReplyDeleteHere in the UK we have experienced quite a few bad storms recently with strong winds and rain ... more are due this week!
Roll-on Spring.
All the best Jan

thanks Many all over are having a rough winter-we are getting a couple warmer days this week-so I can run a few errands
Deletehappy new week
We've had a cold month too, but you know how to do cold weather right. Baking cookies sounds like a fun way to stay inside and be warm. I think the cold is everywhere this month. I guess it is winter but it's been too cold for too many people. Don't eat all those cookies at once Kathy. hugs-Erika
ReplyDeleteIt has been freezing where I live too! I have been dying to have a privacy fence put in my backyard but I am going to have to wait until it stops snowing everyday haha. The cookies look delicious! It is always so hard for me to stop myself from sneaking a bite of the cookie dough before they bake haha.
ReplyDeleteThose cookies look fantastic!
ReplyDeleteI'm glad you haven't had the ice pushing you dock around.
A woodstove would be wonderful.
Stay warm!
The cookies were a nice treat during this cold snap. so glad too that the ice didn't freeze to the docks--warmer weather coming in-happy dance
