Cast Iron Meat Loaf

  I had not made a meat loaf in a long time, so was looking for a new recipe and perhaps in cast iron. I ran into a recipe that turned out so delicious, and baked up so good I thought I would share it.

  The recipe called for a 10 inch cast iron skillet, and when baked, it sliced into perfect serving pieces.  Here is the recipe I used, only thing I changed was using 2 eggs instead of 1 egg-with 2 pounds of ground hamburger it just seemed to me it would need another egg. I used ground sirloin, so there was very little fat to drain off-only about a tablespoon

  I do not have a broiler so my meat loaf does not look as pretty as in the recipe The recipe called for placing it under the broiler after it was baked done



 I served with our new favorite barbecue sauce Jim Bean's Maple Bourbon Barbecue sauce-This has such a delicious flavor that we use as a condiment.





It is just the two of us so I froze two meals for later, and we will have it again tomorrow for our dinner.

  2. Have you ever tried mixing BBQ sauce into your meatloaf? I've sometimes do that. I've also used salsa on an occasion or 2. Or you could bake it with the BBQ on top so it gets all caramelized. I've never put meatloaf under the broiler. That's an interesting idea. I think your meatloaf looks yummy. I like meatloaf, a couple of meals with veggies or potatoes and meat loaf sandwiches are the yummiest. Hope all is well Kathy. Hugs-Erika

    1. Good morning, that would be good too-mixing in a little BBQ sauce, I had never thought of using the oatmeal which worked out really good-perfect for gluten free too. I had never thought of the broiler at the end either. Yes guys love meatloaf sandwiches for sure. Thanks for asking, I finally see the doctor this morning, Larry has to drive me though as my car broke he thinks it is the starter. Last week we were iced indoors so couldn't get to my appt.

  6. Kathy we must be on the same wave length...hubby and I adore Jim Beam' s Maple Born on. It is our favourite barbecue sauce. Your meatloaf looks fabulous.

    1. I just discovered this bbq sauce recently and we both really love the flavor it's a little smoky too, I really like Guy Fierre's bbq sauces too this recipe for the meat loaf turned out sooo good

  8. I've been making meat loaf with BBQ and Heinz sauce for years but this looks so good -- and in the cast iron pan. I've never done that. Thanks for a great idea!
