New Recipe-Almond Flour Cookies

After cutting a lot more grass,  I decided  to bake up a batch of almond flour cookies. I have not baked with almond flour as the only flour in the recipe. Almond flour is a very safe food for acid reflux. I changed the chocolate chips to white chocolate chips which is also a safe food.  Butter is not on my list, but I bake with coconut oil mostly for me anyways.

  Here is the recipe I followed but I doubled the recipe. The author made huge cookies and only got 10 cookies from her recipe-I doubled the recipe, made smaller cookies and got 36 cookies-not a lot of cookies for 3 cups of almond flour though. I also lowered the bake time to 9 minutes which was perfect.

    These turned out really good  so I will make them again. I have enough that I can freeze most of them too.

      This first photo are balls of dough that I pressed down. The recipe also says they don't rise much or spread out-they did rise a bit for me


You can see that when they bake they don't change as much as regular cookies when they bake


 
   I am exploring new recipes for this acid reflux condition I am dealing with, which is finally getting better,
 

    We have humidity and warmer temperatures-in the 80's this week. I needed to break down and turn the a/c on for us-set at 79

  4. I've only used almond flour when mixed with white, so this was interesting. I tried a peanut butter cookie the other day, and I've never made such a tasteless cookie in my life. I don't know why this happened as it had a cup of PB in it. And you asked about my bees. I didn't have any this winter because my hive absconded last fall. I went in one day and it was doing well, and then several days later it was empty. Not even dead bees. I'm sure sure why they absconded as there could be many reasons. The sad part is that they probably died wherever they went to over the winter. Thanks for asking Kathy. hugs-Erika

    1. I am soooo sorry you needed to replace your bees again-wondering why they left you that is sad-lost the queen perhaps? good luck on the new bees
      after the cookies cooled I was not as impressed with the all almond flour, so next time will mix in with my gluten free flour hugs

  5. So good that you are willing to change your diet to help your acid reflux... hubby is not like minded... sigh... He takes omeprazole to help his... they have lately had to up the dose.. A few things he know to avoid .. such as Tabasco that can really give him severe heart burn.. So glad to hear your cookies came out so good. Had the littlest Grandlittle for a sleep over. We made Monkey Cake that has been renamed Unicorn Cake... lol We had alot of fun making it. I haven't made that in years! Friday night the Eldest is sleeping over.... she's a huge cookie fan so maybe we'll make chocolate chip cookies.. Hows Larry doing Kathy? I hope he's feeling better.. Alvin is off to play golf this morning before it gets too hot.. in preparation for a golf tournament Saturday... Does my heart good to see him still involved in golf... still able to do it.. I'm working on the back yard today before it gets too hot but first COFFEE! :) Hugs! deb

    1. The doctor gave me two pills-one at our main meal and one for the asthma systems from this at night. I read online about all medicines we are given-most articles suggested none of these acid refulx medications should be taken long term-like no more than a year- I will take for 6 months and then decide what I want to do
      we are humid and warmer than we have been-so I am out early with the weed eater-I have one of the large batteries that lasts an hour or a bit more if I am not going through tall grass and weeds like I did this morning-I am down to one more big battery left to do I think-next week looks like lots of rain-so I am hoping to get the garden soil down etc
      sounds like fun times with the grands-hugs try another peanut butter recipe-lots of choices online and on pinterest a good place for recipes. I think I used honey or maple syrup instead of sugar when I have made them in the past.

  6. I am glad your reflux is getting better. Those look like good cookies. I freeze the round dough before cooking so when I want a warm cookie I take out of the freezer and right into the oven perfect.

  7. Kathy hope your acid reflux continues to get better. I have never seen just almond flour in a recipe. Dick being gluten intolerant is able to tolerate oats and oat flour. I use it a lot. Lots of the gluten free flours don't agree with him but oats seems to be okay. He suffers from terrible heartburn too...sugar really bothers him as well as certain chocolates. Well hope you are not working too hard in this heat. Hugs!

    1. Thanks me too, and I do now wish to stay on the medicine for a long time either. chocolate is really bad for acid reflux but the white chocolate is ok. Have you tried bob's red mill 1-1 gluten free flour-I trust Bob's gf products and this is a really good flour for baking. I have switched back to making up my own gf flour mix that I really like-if interested I can refer you to her site.
      After the cookies cooked I was not all that crazy about them the almond flour has a bit of an after taste too if used alone.
      it was very hot and humid here today-but I was working outdoor early morning.

    I think many people find that by making changes to their diet and perhaps lifestyle their acid reflux can improve.

    1. I totally agree I thought my asthma was out of control because the symptoms were like that and I could not breathe well scary I did a lot of reading so changing my diet for this

    1. Thank you, I am not that crazy about these after they cooled and I ate one the next day. I think next time I will combine the almond flour in my gluten free flour I am doing better finally- before eating something I look it up online to see if ok or not. no citrus, no tomatoes, only very low cheeses-the list goes on and on haha

I have never used Almond flour in a large quantity for baking, but keep a small amount in the pantry along with oat and wheat flour, plus bread and AP flour, King Arthur is my preferred brand in most, along with Bob’s Red Mill. It’s too bad the almond cookies did not turn out as tasty as you hoped, Kathy.

    1. Good morning, I have not either-I will combine a smaller amount of almond flour with my gluten free flour next time. Those are my favorite flour brands too Bob's Red mill and King Arthur. Have a good week
