I thought I would pop in one more time before Christmas
I finished up making the tamales today. I had prepared the meat yesterday and did one steamer full of about 20 tamales. Today I made up the rest and ended up with 40 more tamales. I will keep out some for tomorrow and freeze the rest.
This year I shredded a part of a beef roast and added that to browned ground beef sirloin and two long chorizo sticks. Added a jar of Paul Newmans salsa and a little bit of shredded cheese.
We like our tamales with more meat than corn, so I lay down a thin layer of the masa mixture and pile on meat in the center-roll it up and tie. Steam for an hour.
Your tamales look absolutely delicious. Did you have any help working on them/ They are really time consuming to make but definitely worth the time it takes. When I used to make them I didn't have help, except for the dog and cat sharking around me the whole time aggravating. It was always a relief to tie the last little strip on the last tamale end. All work well worth it. They remind me of little Christmas gifts, packets with little ties at each end.

No just me making the tamales-they are time consuming but we always enjoy them especially my husband. and I have several meals in the freezer now too.

DeleteHow delicious these look! All your hard work will really pay off this winter when you enjoy a nice hot tamales meal. We do enjoy the holidays, but are always happy when they are over. I am looking forward to a couple of quiet winter months when I can, hopefully, do some of the things I have been wanting to do. DeleteOne year five of us made tamales in an assembly line. I told them I didn't care what job I had as long as it wasn't tying the ties on each end. We made half with raisins and half without. We made over 500 that day in my kitchen in Webb City, MO. I am so glad you shared yours, because I had forgotten how much fun we had and how much yours resembles what we made.
