Freezing Veggies from Store Bought & This & That & Vacuum Sealer

   Good morning Wednesday, We have been watching  President Trump and First Lady arriving in England this morning. I recorded it as it was early this morning.  Kinda like watching a movie with the elegant coaches and awesome horses, then the military bands etc.

  Yesterday I needed a big wal mart trip. Got  my plates renewed first-this city is still under construction at their main 4 way section to go anywhere in the city.  They have been working on this since the spring months. This time only one lane all four directions so very very long wait times. Coming home my car did not like this, it was shaking a bit, and the a/c quit (we are 90's and humid)  and the engine light came on all the way home.  ugh 

   Made it home safely but now another concern. I may have to figure out how to drive Larry's big suburban after all that is a bit scary for me  always challenges in life-right?

  We did get some rain finally-but need more as the next day the soil grabbed all that rain and now very dry still.I just noticed that the fall colors are here already-thinking do to no rain.

     I wanted to grow some spinach etc but the weather is not cooperating, soooo I looked to see what wal mart had in fresh veggies. My smaller wal mart has very little in frozen veggies-instead all the frozen dinner type stuff-ugh.  I brought home fresh spinach and fresh kale that looked really fresh and am in the process of steam blanching it all to freeze. I also picked up a very fresh looking cauliflower so will steam blanch that too for the freezer. 

 The spinach of course really really shrinks down, If I would have had room in the frig I would have gotten two containers of it. I usually mix a little bit of the spinach with the kale or with peas when I serve it. So for around $3.00 for the container it will make several meals

  In Larry's younger years, He spent several years in Japan and loved it there. When we first got married and we had a huge veggie garden he used his wok to make us delicious meals. He also had a large steamer like this one. When we used to go to lots of garage sales-I found this smaller version. It is nice for small batches.   My camera does not take indoor photos well-this was the best one. (I soooo do Not care for electric stoves-especially since I loved my 10 burner Wolf commercial gas stove)   The plan was to upgrade all of the appliances after the woods property sold hopefully next year that will happen. I prefer  a gas stove and oven. and the oven is going out on this stove-jumps to over 400 degrees F if I need to set it over 350 degrees F

  


 After the vegies come out of the steamer I place them in very cold water first--ice water is better but we don't have a ice maker. then drain them in strainers and freeze.

   I am excited that my next meat box is to arrive tomorrow. they offered usa farm raised turkeys so I added one to the box. The organic option was too expensive,  but the other option was still ranch raised with no antibiotics etc added to their food. These are 10-12 pounds. Last year's butterball was terrible  so hoping this one will be better. I have tried the store brand turkeys  here at the store near me and it was not edible- I ended up just getting some soup stock from it.

  Happy Mid-week everyone-I am off to get these veggies packed and in the freezer.



Update Afternoon:  I wanted to give an update-Remember the post I shared about using a vacuum sealer with canning jars and lids?  I did several wide mouth pint jars of fresh blueberries, grapes, and those little sweet tomatoes .I sealed those on August 26-today is September 17 so am guessing around three weeks. This produce is still fresh just like when I bought it. These are in the refrigerator. I have a vintage tool we found years ago that pops open the canning lid without bending it.  The tomato jar has now been opened and resealed three times now.  So am very happy with this process, and I am not going through lids when I open and seal it again.

   I had also done quite a few pint wide mouths of raisins and cranberries-they always dry out on me-they look perfect as well-since those are dried they can be in the cupboard. I also sealed open bags of rice.  So I am very happy with this vacuum sealer.

  1. I used to love turkey but the older I get I don’t care for it - to me it tastes too gamey. It smells good when it’s cooking and I love all the fixings that go with it and of course the gravy!

    1. Hi Debby I was not going to buy another turkey after the fails the last few years-but I thought I would try the farmer raised turkey this time. It is just the two of us these day too but I try to still celebrate the holidays.

  2. The older I get the more I dont like eating red meat...except for a burger now and then. I prefer chicken and fish. Am getting weird in my old age. LOL Glad the veggies worked out for you. My air just turned on and it is almost 9pm. It is still hot outside. Janice

    1. Good evening, we don't eat much red meat either. Larry told me a few months ago he didn't want to eat pork any more. He is liking my alaska seafood box-except for the salmon, which I am happy he likes the different white fish choices, we eat poultry, and then we needed to add in beef for a third choice-but I wanted quality beef knowing it came from our usa ranchers. I only serve the beef once a week or every 10 days or so. and just a small amount of it too.
      If we ever get cooler weather will make us more soups. we are still so hot and humid here too-so tired of it

  4. It's wonderful that you make so many vegetables. I have not eaten meat in over 37 years! Hope your car holds up- Our weather which was in the 90's have finally cooled off to the 70's and 80's. I bought spinach this week too and enjoy It but it does cook down a lot. Hope you have a good week.

    1. Good morning, glad you got a break in the weather-hoping us too soon. I was a vegetarian for quite a few years back in the late 70's and 80's we just started eating a little beef recently. I miss not having a garden-we are over run with wildlife here at the lake-they eat everything haha have a good rest of your week

  5. We are still hot here too.... 100F forecasted for this coming Monday...!! Summer can stop any time now... lol I'm still mowing.. even with no rain the weeds here seem to grow just fine, maybe just a little slower.... now i can mow and i'm good for a week or so.. then they shoot up their little seed heads and i'm back at it.. I mow the front twice then i mow the back... front grows faster for some reason.. No freezing or canning here i'm afraid.. but glad you found what you need and the tools you bought to help you are really helping! Hugs! deb

    2. Said the heck with the weedeating today and spent some time chopping at the SunFlowers... cutting off the dead heads etc... I'd rather be deadheading roses but not to be... So i take all that love and give it to my SunFlowers and they give back in Spades... So many butterflies, caterpillars, ladybugs, grasshoppers.. lizards underneath in the shade... they give some privacy and entertain the GrandLittles... Last year we would filll the little blow up pool with SunFlowers and lay in it...lol I hope your having a lovely day too!!! Hugs! debb

  6. Sorry about the car issues it can be frustrating. Sounds like you are stocking up a bit.
    I haven't cooked a whole turkey in years. And when I did it was for my women's group when they were coming for our Thanksgiving.

  7. Glad you got veggies so you can freeze them once blanched. I used to like turkey, but now not so much. I DO love fish and your fish box sounds great.

    Sorry about your car. That happened to me one year when I was on a trip. Hope the weather cools for you, soon. Still hot and stormy here.

    1. Hi Elizabeth, I am buying my fish from Alaska-all ocean fish so not oily or "fishy" tasting so am happy Larry is eating it. From Wild Alaskan co I love their salmon too My car is old a 1999 Mountainier I love it perfect for grocery shopping doesn't have a ton of miles on it-but it is old-like me haha
      Surprise --we got rain tonight with a lot of thunder-been raining for over an hour now so a good soaking rain-finally only bad thing my grass will be growing again. take care

  8. Everyone I know that has a vacuum sealer, raves how good it is. Freezing peaches and chopped apples is on my list. It will be apple harvest time in Vermont in a few weeks.

    1. Good evening, I was a little skeptical of the vacuum sealer-but I am very happy with it-really prolongs the life of the little tomatoes, berries, and grapes that I have tried so far and I like that can reuse the canning seals as those are very expensive now

  9. Hope all is OK with your car or you find out driving Larry´s car is fun... We had a Nissan Patrol LWB and it was a lot of fun driving! YOu sit high up and see much better.

    1. Larry's suburban sits up high too It is just so big compared to what I drive now I used to preserve most all of our food except for some fresh items

  10. Spinach is not one of my favorites. I grew up detesting almost all things vegetable. Finally in my 50's I started trying out a few things. Asparagus is now one of my favorites!
