How are you all this week? I didn't do anything exciting in the kitchen this past week, or anything new that was share worthy either. I thought with many of you having a garden or access to a market for fresh foods I would share a couple spring dishes that sounded good that I found online.
This first one is Asparagus Risotto
This is a vegetarian dish that looks and sounds delicious.
Another vegetarian dish Vegan Pot Pie with Spring Vegetables
I love soup so this next one sounded really delicious too
Spring Minestrone Soup with Chick Peas

I have had the white asparagus, Larry would talk about those growing up-figured they would taste the same?

ReplyDeleteThese are all great vegetarian delights. I love the last one with the chickpeas, but they all sound delightful. The veggie pie actually sounds decadent. Thanks for all three of these.

DeleteI think that anything with asparagus is delicious!!! I've actually been watching videos and reading recipes for pot pies! I got a few small pot pie pans and I'm going to try them out!
