Good morning Sunday,
Were you able to see the awesome moon last night?
Here from the big windows looking out at the lake-the moon was to the far right amongst the tree limbs-but I was able to view it-wonderful. They say we will be able to see it again tonight It was very red.
I have not made us cookies in a long time-probably since last Christmas time. On Pinterest I ran into an oatmeal-peanut butter-chocolate chip no flour recipe I mixed up the dough late Saturday and baked them before our 2 pm meal today. I liked the ingredients, natural peanut butter, maple syrup, rolled oats, chocolate chips, a couple eggs and baking powder, vanilla extract.
In my pantry years ago-at least 15 years ago or so I was into making my own extracts-They turned out sooo good too. I still have two bottles that I haven't used much of since I made those. These are just excellent now from the years of aging. I will start using these up instead of buying vanilla extract. I also found a bottle of lemon extract I had made during that time as well
I have made something similar to this recipe in the past but this was a much better recipe-flavor and texture. It made 2 and 1/2 dozen cookies-will freeze half of them.
Here is a link to the recipe
I think the peanut butter makes them a little shiny. Good texture and I love the maple syrup in these too. Once a year now I buy a gallon of maple syrup from a farm on the east coast-sooo delicious and worth every penny. It is getting pretty pricy now though. Larry likes homemade pancakes with maple syrup for Sunday mornings.
The weather people said cooler today with rain this morning. We heard lots of very loud thunder and lightening for about 15 minutes around 7 am and then just a couple seconds of sprinkling rain-and then it all just left-sigh so we missed the rain again.
It is at that point now not worth the water to water my plants any more-but I do water them just enough since they are mostly perennials
On another "this & that" I am getting too many kindle books this month-I started getting newsletters from Book Bub and also Amazon for Kindle-with too good a deals-or free to pass up-so I need to start deleting those emails before looking at them haha. I have lots of different reading material now to choose from, many new to me authors as well..
One last "this & that" How often do you change out your wooden cutting board? We retired and moved down to Missouri around 25 years ago-and that is when I bought a new wooden cutting board. I had been thinking about changing this one out for a couple of weeks now. I saw an article probably on Instagram about needing to change out wooden boards every couple of years. That article said even though you wash and sanitize with bleach you can't get all the bacteria out of wooden boards. I am thinking Wow yes I do need to change this out.
So I went with bamboo cutting boards-I bought a three pack that was on sale on Amazon so went with that. Didn't make sure about the sizes so the biggest one is smaller than I would have liked the best-but it is working. I read they should be oiled with food grade mineral oil so will need to check into that, and to replace when the bamboo has deep cuts in the board. Sounded easier and sanitizes better than regular wood--any of you have bamboo kitchen cutting boards??
This is the one I chose I like them but they are smaller than I thought they would be --largest one is 15 x 10 inches My other board was twice that size. These will work out ok
Sharing a photo I found online. This is Bagnell Dam on Lake in the Ozarks-that makes the electricity for our area more info here
Happy new week!
That moon was really impressive, wasn't it? Do you still have high heat? Those cookies look tasty. And you're right, real maple syrup is great and definitely worth the money. Happy new week. hugs-Erika
ReplyDeleteYes a very awesome moon we are very clouded over so may not see it tonight-but I will look for it. Yes real maple syrup made on a farm is very special to have on hand Happy new week hugs
DeleteI have butcher block countertops in my kitchen and cutting boards. It would cost a fortune for us to replace the butcher block every few years. We’ve always sanded down the boards, and place them in the sun as my grandma would do. Oh well, what doesn't kill me only makes me stronger! 😆
ReplyDeleteOh I love that idea to sand down the boards-yes no way one could replace butcher blocks-that would be awesome to have. great idea to place them in the sun too. my main board was nothing special but I do have several vintage boards-I won't give up-so will try the sun thank you

ReplyDeleteGood morning-thank you
DeleteThe cookies do look very good, Kathy! Thanks for sharing!
ReplyDeleteGood morning Monday-thank you did you ever get a cool down?
DeleteHi Kathy, thanks for asking. Unfortunately no, we did not get a cool down in the last few days, so I have been staying indoors for my safety. It is getting to the point where some people are getting down, including myself. I love to take walks in nature but haven't been able to, unfortunately, but I am doing my best to keep busy inside...laundry, cleaning, organizing, enjoying the company of my two male zebra finches, and taking care of them. I hope you are doing well, this heat doesn't seem to give us much of a break.
DeleteThankfully we are supposed to get some relief on Wednesday. It is supposed to be 26 Celsius or 78.8 Fahrenheit. I will get out then, go out for breakfast and then do some grocery shopping...which I will have delivered.
Stay safe, dear Kathy, and thank you so much for your kind comment on my blog and for your concern. Warm hugs and much love to you.
So sorry about no cool down for your area either. I thought we were getting rain this morning but it lasted less the 5 minutes. I agree us seniors can not be outdoors in this-and the air quality is poor as well with the wildfires.
DeleteI am working indoors too and reading and playing with some crafts. if I don't feel like crafts I color in coloring books and then used the backs for stationary It is calming like my spinning is.
I have a seafood box from Alaska, and also a small beef box that comes delivered in different months and every 8 weeks or so. I buy a lot of non fresh foods online too and have them delivered-just need the grocery stores for fresh foods.
I am liking getting foods delivered at my age too. I have so much outdoor work that I am behind on but trying to fret over it-it is what it is smiles.
take care dear friend-hugs
ooops trying not to fret over it
DeleteLOL! I caught what you mean (on the oops). I am not good at crafts or art so I, when I am not doing chores around the apartment, like to do crossword puzzles (the mixed ones), I read non fiction and watch some things on YouTube on my television. I also do some posts for my blog...as in searching for what I will post. Take care of yourself, dear friend, and I hope you get some relief as well! Warm hugs.
Deletewas sitting at the computer doing a puzzle on jigsaw planet when your comment popped in-I don't do crossword puzzles-not good enough with words for that-but I love doing puzzles on their site---we just got a rain storm coming through-more booms then rain but we did get a bit of rain-thankfully. I watched a lot on you tube too and for movies we found a free site called Tubi--they have lots of choices to watch there. they run old rv series as well. I have been watching a series that was based in England-murder mysteries really good. You take care as well and hoping you get rain soon too hugs
DeleteFlourless cookies are great! I do have bamboo cutting boards, but I prefer real wood ones.
ReplyDeleteGood morning, I love the real wood boards better too softer and not so hard on the knives either.
DeleteCookies look yum! Not a huge fan of nobake/flourless but they still look yum!! No rain or even thunder to speak of here... but they are talking a small chance for today... I'm actually hoping for no rain ... the grass/weed combo in my yard is dying back nicely and my workload is getting easier.. finally... That big rain in July really made things grow longer in July.. and dragged on my mowing season.. i have used a plastic cutting board for years but before that i used a wooden board for years... Most of the time i just use a paper plate... lol Take care Kathy! Stay cool! Hugs! deb
ReplyDeleteGood morning it is around 11 am now and just started raining-gently- hope it lasts awhile. I have given up the grass cutting do to the extreme weather here-it will be a huge job for sure once I can get out there to work on it.
DeleteI had a hard plastic board too for awhile-but decided I didn't want foods in contact with even more plastics. I do really like a wooden board the best. but will see how the bamboo works out. you take care as well hugs
well sadly we got less than 5 minutes of rain not enough to do much except to make it more humid
DeleteOur slight chance turned into no rain , another slight chance today... :)
DeleteGood morning we got a little bit of rain last night-more thunder and lightening though then rain
DeleteKathy your cookies look delicious. I have never used maple syrup in my peanut butter recipe - it has no flour but calls for sugar instead of maple syrup - will certainly be giving this a try. It sounds like you are like us in Ohio - praying for rain...watering is only keeping some veggies alive but they have quit producing. Another heat wave is here and that makes everything even drier. Wow it sounds like fun to make your own vanilla and lemon extract. This is something that I have never done before. Thanks for the idea. Sorry about your seeds not germinating. Us gardeners just have to be the most hopeful of folks...every year something fails but the next year finds us planting and looking for better results. (LOL). Am looking forward to some cooler days with fall on its way. Bet you are also. Hugs!
ReplyDeleteGood morning it is around 11 am and just started to rain a little-hope it lasts for awhile we need a good soaking for sure. you may need to add a little more oatmeal with the liquid of the maple syrup but love the flavor it adds.
Deleteback when I was doing a lot of canning and preserving I had fun with the extracts, made kahula too which is really good-made that with decaf coffee and splenda instead of sugar. when I had a garden I made several herb vinegars-all was fun to do.
I was very surprised my flower seeds did not grow-and I had bought a lot of different seeds too sadly it would have been very pretty and brought in the butterflies etc. take care have a good week hugs
I was thinking of making some funfetti cookies as I have not baked anything since Christmas myself. I use wood boards. Wish we would get some rain. So hot and humid here. Janice
ReplyDeleteI think most of us are lacking in rain--we really need it too-we missed the rain again today. back to hot and humid here again too ugh oh well that's mother nature-smiles
DeleteWe don't get any summer rain here. I do miss that. I haven't baked cookies for ages. It's time I think. Enjoy!!
ReplyDelete-Soma
Hi yes I had a taste for some homemade cookies-I would miss no rain in the summer-but then this year we haven't gotten much at all-take care
DeleteI made cookies this past week too Oatmeal chocolate chip cookies.
ReplyDeleteI say you do not need to change it out. If you think you need more than washing and sanitizing take a fine grit sand paper and give it a sand and put some mineral oil on it all good to go again.
We are hot too this week it is horrible. We have a rain barrel we are using to water the veggie garden with. We had a very wet spring so hopefully the ground water is good.
Cathy
I never knew about sanding down the wooden cutting boards I didn't see that when I was reading online--I will do that with my vintage boards-not giving those up. I need to find the mineral oil too thanks.
Deletethis summer is way too hot and mostly humid as well-we were supposed to get rain tonight for a couple hours-but they took it all out of the forecast-so must have just missed us again.
the rain barrel is a good idea we had one up in Illinois before retirement-we had a huge veggie garden that I processed for food.
take care and stay out of the heat-hugs
