Beautiful Weather

   Lovely weather here the last several days. No rain so far which we could use but want to get more grass cut before it does.. I can see the end nearing-finally-a few more days of cutting. 

  I did make an upside down fresh apple cake yesterday morning-very delicious! I shared a quarter of it with our close-by friend that helps us a lot. I usually make us apple crisps so this was a nice treat. I used a Bob's Red Mill Gluten free yellow cake mix-used light olive oil instead of butter and added in more vanilla extract. The cake is very moist using the olive oil.

 Strange-Google is acting up and won't let me place the cursor under the photo so will close this post-Happy new week everyone

  5. That looks yummy even to someone who´s not much into sweets! Reminds me.... months ago I bought a ready to make apple cake mixture which I planned to make with real apples added. Just... where did I put it???

  6. Wow that looks delicious Kathy!!! Well its been hot and humid here.. Indian Summer i think you might call it... uuughh.. I have my front yard grass mowed including the ditch or gutter... I can mow alot of the back yard with the push mower... but still alot of touch up with the weedeater... always looks nice when done.. Did you see the partial lunar eclipse last night? i stood outside for awhile looking at it.. such a beautiful moon last night.. Don't work too hard Kathy... Littlest Grandlittle spending the day with Grandma and Grandpa today.... warms my heart just how much she looks forward to it.. :) Hugs! deb

    1. Yes the moon is amazing! it has been shining very brightly over the lake all week. I loved visiting my grandparents on the farm-such good memories-enjoy hugs

  7. as you can see by the previous comments, kathy, we would all have enjoyed a piece of the apple cake. Now, I will have to think about an apple dessert for the weekend cause it is apple time for vsure!

  8. Wow, that cake looks so good. Hubby would love this one. His favorite is pineapple upside down cakes, but I think he would like this one too.

  9. Dear Kathy, I'm glad you're having fine weather. It's nice here again now, too - last week Lower Austria was a disaster area due to flooding and storms... (You can see a few pictures of it at the end of my post today.)
