Snow Thunder Calls for Cornbread and Bean Soup

   Yesterday we were in the 60s F This morning we woke up to low 30's F thunder rumbling and snow. Never heard of snow thunder before but that's what they were calling it here haha.

  Decided a perfect day to make a multi bean soup with ham chunks and cornbread. I know full of carbs but so good on a cold day, and I love this cornbread recipe I found at King Arthur's back in 2004. They have since taken the recipe down which is a shame as this was designed for a cast iron pan and contains no gluten flour

  I started out soaking a few cups of Bob's Red Mill multi bean soup mix, added more navy beans.  After rinsing the beans-added to the pot, filled pot 3/4 full of water, handfulls of soup mix herbs, dried onions, and dried soup veggies, and grabbed some ham chunks from the freezer and a couple of bay leaves




Turned out delicious Once a year I will buy a very small ham and  cut it up in chunks and then freeze for soups like this. We love ham but way to much salt for my husband-so gives us a little taste of the ham.


The recipe calls for an 8 inch cast iron pan, when I double this recipe for more people I use my square cast iron pan note: the written in notes is the ingredients doubled

We ended up with around 4 inches of snow and thick slush. So very heavy to shovel off the steps. I made it up to half of the hill and then quit, as it got windy and I don't want to risk falling-very steep on top. So I won't be checking my mailbox today-sigh-I do love mail We are going back down to the low 20's so we will be iced in tomorrow for sure.

  1. Your soup and corn bread sounds wonderful! we are in the mists of a snowstorm that will turn into freezing rain up to a 1/5 of an inch of ice then snow! Ugg why couldn't it just stay snow. We have had thunder snow a couple of times here and it is very unsettling.

    1. that was the strangest thing to hear thunder during snow. oh my ice is the absolute worse-at the woods home a few years after we first retired-there was a massive ice storm that snapped almost all of the electric poles in the county we we were in-we had two woodstoves so we could stay warm and cook on the tops-we are going to see if we can get the woodstove chimney repaired here at the lake house-so we can have a back up just in case-stay safe hugs

  3. So old man winter is back! Your soup and cornbread look so good- perfect for a winter’s day. You should have a letter waiting in your box when you are finally able to get there, but best to wait until the ice is gone. I am so glad to have this cornbread recipe with no flour.     1. I was out shoveling a path up to the mailbox so now this morning I am back to coughing allot again ugh. but monday we will be warm again haha Larry hopes to go out in his boat and go fishing hugs

  5. Oh, the temperatures don't sound nice at all, dear Kathy, I hope you don't freeze too much!!! A warming soup is really good when it's so cold outside. And your bread looks amazing - luckily you saved the recipe.

  7. Your soup looks delish Kathy!!! Brrrrr.... I have heard snow thunder a few times in my life... always amazing! Shoveling and snow and slush and the 20's does not sound amazing!!! Stay warm and safe.. By coincidence hubby is making his son of a gun... that has morphed many times over the years... It used to be his momma's recipe now it is uniquely his own. Today it will have ground turkey, black beans, corn, Picante salsa, onions, garlic, pepper, cajun spice, potatoes, and maybe more i can't remember.. lol We'll be eating it for days! Hugs! deb

    1. haha sounds good-one could always freeze some of it too-I try not to make such a huge pot any more-but if there is more than two days I will freeze the rest another super cold one today too hugs

  8. Oh yes-please be careful on the ice and snow. Your cornbread looks very good-thank you for the recipe! I love to make it. That's a good idea about using small bits of ham-I think I will do that because we don't buy it for the same reason.

    1. I remember growing up my father loved ham but it is really salty for sure. I don't buy a large one any more although I do miss not have the bone to use for soups like this. buying one of those thick slabs of a ham works out really nice for this

  9. 60 to 30, wow, wow. We had winter thunder not long ago. Scares our bigger dog. Did you say corn bread? Yes, please! Love me some cast iron too. I have our Erie/Griswold pans. Delightful. Back down to 20’s – at least you have great soups and bread. Stay warm!

    1. I love my cast iron-I pretty much only cook in cast iron-we have collected allot of different pieces over the years brrrr it is in the 20's here still

I have several cast iron skitllets all different sizes, I have allot of wagner and griswold pieces along with lodge-I did buy a new lodge large and deep grill pan-very awesome use that allot to grill up our meats that one is probably a favorite but I am not ready to part with my cast iron collection yet. hoping to get set up outdoors again to use my dutch ovens-love to make pies etc in those
