T Stands for Tuesday & Pumpkin Bread

   Hi everyone, Wow the last Tuesday of November-can you believe it??

   Those of you in the USA, hoping you had a wonderful Thanksgiving long weekend. For us it's just the two of us but I do try to make the meal festive. My sweet potato pie was really delicious. I froze the second pie in quarters so we can get that out for a treat later.

  I love pumpkin most anything, so I wanted to make a pumpkin bread. I don't have a good recipe anymore for gluten free. Searching the internet, reading lots of recipes I found the perfect one for us. I loved it especially since I didn't need to substitute ingredients-it already included Bob's Red Mill 1-1 gf baking flour, coconut sugar, coconut oil which are the ingredients I like to use in allot of my baking. It also included a little pure maple syrup too. Here is a link to the recipe-This is a keeper recipe for sure. Some recipes had 4 eggs which for me is just too much. This one had 2 eggs I also soaked some raisins-drained and added those in the batter. One small can of pumpkin is just shy of 2 cups. The recipe called for 1 cup so I made two loaves and froze one.  Larry who is not a big fan of pumpkin really liked this bread too--so I will bake this again for sure.

   I would suggest to know that your gluten free bread is baked all the way through is to use an instant read thermometer  I learned this the hard way over the years that it is really difficult to tell if a gluten free bread is actually baked done. It would brown up and look baked but after cooled I have had sooo many that were not baked all the way through.

   I google for what temperature I need for what I am baking now. The pumpkin bread needs to read 195 degrees f to 205 degrees f.  I bake according to the recipe-and then start using the instant read thermometer-this one needed quite a bit more time.

  The bread is very moist-really a perfect pumpkin bread and not sweet, which I like too.


   These last few weeks I have been ordering different food products online, since the small Wal mart store here still has allot of bare shelves  and they are getting better with more gluten free choices but I still find more online.   For gluten free products I like Vitacost  allot-and they have excellent packers and fast shipping. I buy wild sourced tuna, salmon products, and they have allot of organic canned fruits and vegies, mushrooms too. They offer free shipping after a certain dollar amount, and always have sales going on-a big one is on today. and what is nice about them they have allot of coupon codes for different products and at check out you can use all the coupons you want. I used about 6 this time  I do find gluten free products like crackers and such on Amazon as well.  and I have been using Sam's club online to buy more items-that are so much better priced than locally, and free shipping with our card. We no longer make the long drive to a Sam's Club-they are always at least an hour or more from where ever we live.

   Have you been shopping food products and such more online too?

For my drink share I am sharing a beverage I haven't had around for awhile-I get it at Vitacost-a gluten free-decaf tea Teeccino has many flavors and different herbs available to choose from. I have never seen it in a local store.  and these make the best dried tea bags to re use for crafting-dark with lots of patterns in them


  The eagle pair has been visiting again these last few days. I really zoomed in my old camera so the photos are so so. We so enjoy seeing and hearing them sing.

    1. Hi this is not the oven temperature but internal temperature of the bread itself that it needs to be for doneness.
      This pair of eagles we can see when we open up the front door-they across the road from us and up very high in the trees

  2. Thank you for doing all that research to help those who choose to, or must be gluten free. A great tip on the pumpkin bread.

    Sorry, but I don't buy anything on the internet. I don't have a safe way of doing it, but there are times when Scott orders things for me to send to others.

    I've never heard of that brand of tea, but vanilla nut sounds good, even if it is decaf. And dried tea bags. WOW. Mine never turn out all that good.

    1. your welcome, we have always lived pretty rural so it's a along drive just to get to a regular grocery store-which is small town but nice, and to a small wal mart- If I wanted to drive in allot of traffic and towards lots of store choices it would be over an hour one way-and I don't like driving haha that's nice you have stores close by

  4. Your pumpkin bread sounds and looks delicious. I do order some supplies online, mostly for baking as the grocery stores just don't carry a lot. But we do have one that does carry a great selection of flours, including lots of Bob's Redmill. I love your mug this week too. I looks the perfect size for a nice cup of tea; with the cold weather it sure tastes good. And those eagles are amazing.   5. I love that you make your meals for two delicious and festive. Meals for one or two are just as important as meals are for an army. Your pumpkin bread looks wonderful. I like that you added raisins. That’s a good looking pair of eagles! I would love to hear them sing.

      I try to make us nice holiday meals even when it's mostly the two of us.

    1. the shelves are empty do to the present administration-they are trying to push us toward communism every day it seems. but the courts are finally overthrowing the extreme mandates which is a good thing

It is really nice to have shopping near by but we have just always loved living more rural. the town we go to for more things has a small local owned grocery store that is pretty nice-they have good meat locally grown which I pick up, and they are getting in more gluten free items too Happy T hugs

  9. I cook gluten free too. I haven't had a problem substituting GF flour in my regular recipes for pumpkin breads. I can't justify using 4 eggs in a recipe either. I often substitute 1/4 apple sauce for an egg, though and it works well. I buy gluten free flour at Amazon because it is cheaper than our grocery stores and then I don't have to carry them!! I also order the Schar crackers that we are obsessed with, they are just like Premium Plus!

    1. yes especially the bobs gf flour substitutes really well. I use allot of my favorite recipes using this flour.
      Schar is my favorite brand for crackers too-love them I just found a flatbread for them which should be nice with the cheese log I picked up yesterday

  11. Your pumpkin bread looks delish! I love pumpkin anything too lol. Love the photos of the eagles and the sunrise, that's worth getting out of bed for lol. I have always done a lot of online ordering, due to where I live mostly and needing special ingredients not found locally then, but getting better now, though with supply chain problems it's bad everywhere.     1. Yes we are usually early risers, to see the lovely sky photos need to up before sunrise-we have always gotten up early.
      we have always lived rural-but I am liking the online shopping more and more now that we are older-and there are allot of steps to climb into the house-so front door delivery is really nice-I always thank them for bringing it down to the door. Happy T

  12. You were very busy with baking. Yum! I hate grocery shopping, always have, and when the pandemic was at it's height last year, I began doing the grocery shopping online from a local supermarket. Why I didn't shop like this years ago! Happy T Day!

    1. Our friends in Wisconsin love shopping online with their local grocery store too-she orders it and her husband picks it up after work she has been very happy with it. I may look into what our wal mart does

  13. I am definitely going to try this GF pumpkin bread. I love that it substitutes coconut sugar and flax eggs because that is what I eat. The raisins also sound like a delicious addition. Thanks about the tip for checking for doneness. I have never baked GF bread so I might have made that mistake.

  15. We are lucky in that we have large supermarkets within a 15 min drive into town, and here in the village I have smaller shops at walking distance. So, no, I never order groceries online.
    Your vanilla nut tea sounds very nice. I can almost smell it (almost!)And the pumpkin bread sooks really yummy.
    The pictures of the eagles are amazing. I didn't know they sung.

      that would be really nice to have stores nearby to walk to. This is a really nice brand of teas I really like them, very full bodied. The pumpkin bread was really good. Yes they do sing-that I have really good hearing so I know they are here when I hear them.

  18. Your loaf looks great - we only see pumpkins in shops in the run up to Halloween.
    As there are only two us and freezer storage is precious we don't make batches very often but both of us love Pumpkin soup. still got some left! We started having on line deliveries during 2020 lockdown and then kept it up, although we do visit another supermarket regularly and other shops that we can only get certain foods from. We also order our coffee online. Love the views of the lake , especially the eagles (see the green eyes) Apologies for this very belated T Day visit.Chrisx

      for the pumpkin bread I used canned pumpkin, but it is really good with fresh too. I order our coffees online too-I can find a better quality that way. hugs
