I guess we ended up with an exciting week after the 4th-compared to others here at the lake.
Larry has been looking for a used dock that is better and safer for fishing off of opposed to the one that came with the house. ( we will keep both as the one is mostly for his boat)
Since so many boats fly by and way too close to our dock-we needed something safer. (boats are suppose to be at no wake for 100 feet from docks-they don't do that here-so close they can touch our boat-and the huge waves they make on the weekends is beyond crazy).
He located one the week before the 4th but the lady kept sending him to the wrong area of the lake, wouldn't share her address or phone number to clarify. She started out asking $1000.00 for it, but when the roof started to collapse she wanted it gone Now for free. So long story short our friend and his two teenage sons came to help. I got one photo as they got closer to home.
They managed to get it here-Larry had to tow it with his fishing boat, got it tied to our dock.
Sunday our other helper friend (that we pay to help us with things that Larry should not be doing any more) came to secure the roof-he needed to cut off a large chunk of it, secure the rest down, and tie up the old broken boat lift more securely. I didn't get newest photos yet.
I had no idea that a brand new dock this size starts at $40,000 and goes up. This one also has a professional diving board on it, and I cleaned up a plastic lounge chair that was on it. The newer styles use cement pavers for the floor instead of the wood.This dock is much wider and feels more secure and safe for fishing or just hanging out on the dock-which I think we will be doing now.
So I am thinking that I will need to learn how to fish now for sure haha.
This dock has the old style of cement pavers-a couple need to be replaced. Something I can do-once it gets cooler and Larry makes the mold and shows me how.
I did get more of my watercolor paints in, have been reading allot from the new book I shared last week (which is excellent) so decided to just try the scene again that I had in my head-with the hills in the distance, lake in front, a few trees.
I am happy with this painting and I can see I am improving
I painted this on mixed media paper because of the size-and I can see that I need to paint on actual watercolor papers. So I just ordered smaller papers

We had a catfish that Larry had caught and we had a small bag of filets that we were gifted from a friend's fishing his pond. Soooo I thought I would give frying fish a go--and was very happy.
I found a very simple recipe online-it was a southern style and she said never dip your catfish in egg or anything wet-instead just dust well with cornmeal-a little flour-spices of choice. She says doing it this way keeps your fish from being soggy.
I grabbed the perfect cast iron pot-used just enough avocado and grapeseed oil to just cover the fish. (these two oils can handle High temperatures-and thought they would be a healthier oil to use as well) The cast iron was perfect as it holds the heat well and I didn't have to wait for the oil to come back to temperature-it just stays the same through the whole process.
I am still amazed how simple this was, and the batter was perfect to our liking.
I also snipped some oregano to dry as it was just starting to seed with this hot weather, as was the mints. These mints are spearmint and peppermint. Once these are dry and bagged I will dry some of the grapefruit mint.
Monday I am off finally to get set up for my crown. I had been scheduled before all this covid happened. Just last week this old crown popped off-time to get to the dentist and they were able to get me in pretty soon-he was on vacation all last week too.
For my beverage share this week
We have been drinking allot of ice tea this week around 1/2 gallon a day between the two of us-we work on projects outdoors in the mornings before it gets super hot and come in really thirsty.
Both of these pottery glasses are handmade, from two different potterers I used to buy pieces from. The glass on the right was from a potterer I loved but couldn't afford his dinner ware. Several artists were having an autumn get together with art and craft sales-these glasses were out on sale for a dollar-Wow I bought a dozen of them 😀 (this was back in the '90s probably)
I took this photo Sunday afternoon-the lake was full of "diamonds"-as the sun was out most of the day.

I almost never fry anything either, but when I do I just do a shallow fry in a big teflon chicken frying skillet. My Mom was an excellent river fisher. She always shallow fried fish, and only dredged them in corn meal before cooking, no egg. I almost never use egg on anything I shallow fry, I dredge in flour or cornmeal. Your views of the lake are beautiful. Enjoy your new dock.

I mostly do things in the oven, but I do enjoy fried things now and then, mostly when someone else makes it! Your painting is lovely, you get better and better, keep going! I love to dry herbs but big pass on the frying for me. It stinks so bad. But I do air fry with air. But oil, phew. Stinky phew.

DeleteYour lake must be very clean to have such good, edible fish in it. We live near the Great Lakes -- as well as having many tiny ones -- but there are a lot of problems eating fish here. You look like you inherited your grandma's talent for frying fish, too.

Yes this is a really nice lake-and long over 100 miles of shoreline. I grew up near the Great Lakes as a kid and even back then there were signs that the fish had too much mercury in it. so we never ate fish from there-it's probably much worse now.

Lucky that you can eat fish from your lake. The rivers that run through Wichita are so contaminated, NO ONE can eat the fish. There's even warning signs telling people to NOT eat the fish they catch in the river. I don't understand why people would waste their time if they can't eat what they catch, unless they believe in the catch and release program, which is admirable.
ReplyDeleteIt's ironic but I was just discussing fried chicken with Sally today (on the phone). She didn't know how to fry chicken, so I told her what I had done in the past, which is the only thing other than french fries, I fry. No longer, though. I'm into heart healthy now.
What an amazing find to get that boat dock. I also had NO idea new ones were that expensive. I love that you got it free. Free is my middle name (grin). That lady's inactivity caused her to lose a sale and there is more money in YOUR pocket now, too.

that's sad that the rivers are so contaminated I know Missouri is always cleaning up the rivers that are here in the state. a real long one the Niangua we used to eat trout from. some people like to just fish too-Larry only likes catfish to eat, but enjoys the fun of fishing-and then releases most of the fish.

I have never fried chicken-Larry loves it, but I don't think I would know if it is cooked through or not so never tried it. My Mom always baked hers.
There are many ways to fry chicken. You have to decide the way that works best for you. Some people soak it first in buttermilk. I never do that, but it does make tender chicken. Some people will dredge chicken in flour. I don't do that, either. I start by rolling the chicken in an egg base, then dredging in pancake batter that has been moistened. You could also use corn flakes, crackers, etc. I prefer the pancake batter that is just a bit thicker than the batter I would use to make pancakes.
DeleteNow it's time to fry. I use peanut oil because it will take the heat, just like the oils you used. I know you are going to want to cook your chicken in a cast iron skillet. I wish I still had one, but can't lift it. DO use yours, though.
Heat oil to 360 F. Oil should be about 1 1/2 to 2 inches deep. Add chicken, a piece at a time. DO NOT overcrowd. Cover and cook for 6 minutes. Uncover and cook for 10 minutes.
Turn chicken. Cover and cook 6 minutes. Uncover and cook 5 to 10 minutes. The last 3-4 minutes you'll turn the pieces several times for even cooking/browning. Remove from oil, place on paper towels or a rack so the oil can drain away.
Hope that helps take the fear out of fried chicken.

haha my visit at the dentist turned out to be an hour long in the chair-he had to also dig out an old silver filling and decay that was under the old crown. so it is hurting a bit this morning.
DeleteI have never seen a dock being towed like before. What a cool idea. At my MIL they don't observe the 100 foot from shore rule either, but luckily it is a tiny pond so there aren't too many boats. The swim raft always gets put out as it keeps boats from coming too close, but I think the one who mostly used it (besides the ducks who pop all over it) is our dog Pete. He likes to climb up on it and roll in the poop. OK, enough about that. I am loving the latest art piece and your pottery mugs also. I have a large hand thrown pottery collection that I purchased in the '70s through the '90s I really love using it.

Yes the dock was a good find for sure. I am anxious to read how your fish fry works out. Yes I was so happy and couldn't believe these were out for a dollar-I asked if that was the right price and she said yes-so I grabbed them-they are different colors too.

ReplyDeleteA new dock, and for free. How lucky can one get! It's good that you have friends who can help (paid or not) and I'm sure you will both enjoy this dock in future.
I don't fry much either. I dry fry in a teflon coated pan or I use an electric air fryer. And occasionally I fry an egg, when we have bacon and eggs type English breakfast. But deep frying, no. My chicken I cook in the oven. I always buy a whole chicken as I like free range chickens. The whole chicken goes in the oven.

DeleteAll this talk about docks and moving them, reminds me of when my folks were alive and lived on Beaver lake. When visiting them, we would walk down the hill to the dock and fish, swim, or go for a boat ride. Lovely days and memories. Our kids lived from early morning to night in the water when we were there!
